Can I make any cake recipe a roll cake?

I have a very nice carrot cake recipe that I've made every year for Easter since the beginning of time. This year, I thought I'd change up the presentation. In the Harry and David catalog they have a gorgeous carrot cake roll so I thought maybe I could just use the same recipe I've always used and just make it a roll cake.





If I use a jellyroll pan and shorten the cake cooking time to about 15 minutes, can I follow the ';roll'; instructions on any roll cake recipe? Or can anyone give me some basic roll cake instructions. Will this even work or am I about to embark on an impossible mission and ruin Easter?Can I make any cake recipe a roll cake?
I've done it before. Make sure you roll the cake while it is still warm and before filling it. Use a kitchen towel on both sides. This will make it easier to roll once you do fill it. Be gentle. Carrot cake tends to be fragile any way, it tends to crumb very easily. I personally wouldn't put cream cheese icing inside and out both. It will over power the cake.





Line your jelly pan with parchment or waxed paper. Use a little cooking spray to hold it in place. Bake the cake about 15-20 minutes. About 10 minutes after it comes out of the oven, turn it out on to a clean kitchen towel. Remove the paper and cover it with another towel. GENTLY roll the cake as tightly as you can without breaking it. After it cools completely GENTLY (there's that word again) unroll it and spread your filling on it. Re-roll it and refrigerate immediately. To serve, slice it about 1 inch thick and dust it with a mix of cinnamon and powdered sugar, maybe even a dollop of creme fresh.
