Mexican Fruit Cake
2 c.sugar
2 c.flour
2 eggs
2 tsp.baking soda
1 large can pineapple,in syrup %26amp; juice
1 c.chopped pecans
Mix all ingredients together well.Pour into a greased 9';x 13'; baking pan.Bake at 350 for about 40 minutes.Cool.
Icing:
1 (8 oz.)pkg. cream cheese,softened
1 stick margarine,softened
2 c.powdered sugar
1 tsp. vanilla
Blend together cream cheese %26amp; margarine,add powdered sugar %26amp; vanilla.Spread on cake after cake has cooled. I am looking for a recipe for homemade Mexican fruit filled cake and frosting Thanks
