I am looking for an icing recipe for a cupcake cake.I thought it had merigue powder in it and was very fluffy.

Meringue like Fluffy Frosting





Ingredients:


3 cups granulated sugar


1/3 cup light corn syrup


3/4 cup water, boiling


6 large egg whites


1 pinch salt


1 teaspoon vanilla


1/4 teaspoon almond extract





Place sugar, corn syrup and boiling water in a 3 qt saucepan over moderate heat.


Stir until sugar dissolves.


When mixture comes to a full boil, remove from heat and set aside briefly Beat egg whites with salt to stiff peaks.


Transfer hot syrup to a pitcher for easy pouring.


Beating at high speed, pour hot syrup in a thin threadlike stream into the whites.


Pour slowly and scrape down sides if necessary to keep the entire mass well mixed.


After all of the syrup has been beaten in, add vanilla and almond extract.

Citrus Meringue Frosting





1 cup egg whites (from approximately 7-8 eggs)


2 cups sugar


3 drops orange juice


1 teaspoon orange zest, finely chopped





1. combine egg whites and sugar into the mixing bowl of your stand mixer and set over a bain marie (water bath)


2. whisk by hand for a few minutes until the sugar is dissolved or preferably until the mixture reaches 110 degrees fahrenheit


3. transfer bowl to electric mixer, beat on medium speed for 10 minutes


4. add orange juice, zest, and a drop of red gel food coloring


5. beat on high speed until stiff glossy peaks form, about 2 to 5 minutes more.








Meringue Frosting





1 cup egg whites (from approximately 7-8 eggs)


2 cups sugar


3 drops lime juice





1. combine the ingredients into the mixing bowl of your stand mixer and set over a bain marie (water bath)


2. whisk by hand for a few minutes until the sugar is dissolved or preferably until the mixture reaches 110 degrees fahrenheit


3. beat on medium speed for 10 minutes


4. beat on high speed until stiff glossy peaks form, about 5 to 10 minutes more





Assembly


1. dollup a heaping tablespoon of meringue on top of a cooled cupcake


2. using your finger poke the frosting to make a nice shape and some interesting peaks

2/3 cup plus 2 tablespoons sugar


1/4 cup water


3 large egg whites


1/8 teaspoon cream of tartar


2 teaspoons finely grated orange zest


1 teaspoon pure vanilla extract

In a small saucepan, combine the 2/3 cup of sugar with the water. Stir over low heat until the sugar dissolves. Using a brush dipped in cold water, wash down any sugar crystals from the side of the pan. Boil the syrup without stirring over moderately high heat until the syrup reaches 240掳 on a candy thermometer, about 7 minutes.


2. Meanwhile, in the bowl of a standing electric mixer fitted with the whisk, beat the egg whites with the cream of tartar at medium-high speed until they hold soft peaks. Add 2 tablespoons of the sugar and beat until the whites are firm. With the machine on, drizzle the boiling syrup down the side of the mixing bowl, avoiding the whisk, and beat at low speed for 3 minutes until stiff, glossy peaks form when the whisk is lifted. Beat in the orange zest and vanilla and let cool for 10 minutes. Use the Meringue Frosting as soon as possible.
