And what kind of biscuits do you using for the baseI am needing a Cheesecake recipe plese - soft cheese cake, not the hard (more firm ) kind?
This one is light and soft and half the calories. I made a blueberry compote or also just cut up fresh peaches and a sprinkle of freshly grated nutmeg but any fruit would be lovely.





2 c graham cracker crumbs


3 - 4 T applesauce


2 c lowfat cottage cheese


1 1/2 c lowfat cream cheese (I used regular and it was good)


1 large egg


8 egg whites


2 c sugar


1 1/2 t vanilla bean paste (or extract is ok)


1/4 t salt





Line a 9'; springform pan with parchment. Mix the cracker crumbs with the applesauce and press into the pan. Bake 5 minutes and set aside. In food processor puree cottage cheese until smooth. Add cream cheese and remaining ingredients, scraping edges of the bowl a few times. Pour over crust. Cover bottom and sides of springform pan with foil and place in a large shallow baking dish filled halfway with water. This helps the cheesecake to cook more evenly. Bake for 40-60 minutes at 350 depending on your oven. Remove from oven and let cool. Chill 4 hours or overnight.





The blueberry compote is made with frozen blueberries (or fresh) 2 1/2 c, 1/4 c sugar and 1/3 c water. Bring to boil and cook until sugar is dissolved.I am needing a Cheesecake recipe plese - soft cheese cake, not the hard (more firm ) kind?
This is an easy one - Use digestive biscuits for the base with unsalted melted butter (about one packet and take away six biscuits). Mix Philadelfia Cheese with lemon jelly (1 sachet) together and pour over the biscuits. Then you can either buy the tinned cheesecake toppings from the supermarket or use fresk fruit.
use digestive biscuits for the base 300 grammes of biscuit 150 grammes of butter line a 7 inch cake tin with foil crush biscuits add melted butter and press into base then refrigerate then for the filling take equal quantities of Philadelphia and mascerpone and a touch of cream whisk them together until creamy spoon into chilled base decorate with fruit of your choice or eat plain with cream.





You can try different biscuits for the base like ginger nuts but they must be hard biscuits


You can buy cheese cake mix in a box from most supermarkets just add butter and milk


for a sweet filling try instant whip but use less milk than recommended for a thicker consistency
