Recipe for eggless cake please??

eggless cake with mocha icicng


a quick microwave chocolate cake topped with chocolate icing flavoured with coffee





1/2 tin condensed milk (milk-maid)


1/2 cup milk, 1/2 cup (75gm) butter


1,1/2 tablespoon powder sugar


100 grams (1 cup) plain flour


1/4 cup cocoa, 3/4 tblspoon level soda-bicarb


3/4 tblspoon level baking powder


1 tblspoon vanilla essence





mocha glaze icing:


4 tblspoon cocoa powder, 2 tblspoon butter, softened


1 cup coffee


1 cup icicng sugar


2-3 tblspoon chopped walnuts





to soak:


1/4 cup coke or any other cola drink





1. sift flour with cocoa, soda bi-carb and baking powder, keep aside


2. mix sugar and butter, beat till very fluffy, add milk-maid, beat well


3.add milk and essence. add flour, beat well for 3-4 minutes till the mixture is smooth and light. transfer to a big, greased deep dish of 8'; diameter


4.microwav for 5 minues, let it cool


5.cut cake into 2 and soak with cola drink


6. for the icing, microwave 4 tblspoon water in bowl for 1 minute. add coffeeand mix, add cocoa and butter to it and mix well. return to microwave and microwave at 70% power for 1 minute or till butter melts, gradually add sifted icing sugar, mix well


7. glaze the cake with the icing , making peaks with the spoon, decorate it wih walnuts.


8. refrigerate until glaze is set, serve with ice cream








Raisin cake


too good to be true! the jaggery topping does a lot to the cinnamon flavoured eggless cake





2 cups flour


1/2 tblspoon cinamon powder


1/4 tblspoon salt


1/2 cup butter- melted


1/2 cup raisins


3/4 cup powdered sugar


1/2 cup milk


1/2 cup water


1.1/2 tblspoon white vinegar


1.1/2 tblspoon soda-bicarb





topping


2 tblspoon jaggery powder


2 tblspoon roughly crushed almonds or oats





1.sieve flour. cinammon powder and salt


2.add melted butter and mix with the finger tips


3.stir in the raisins, keep aside


4.mix together - milk, water, sugar, vinegar and the soda bi-carb


5. add the milk mixture to the flour and beat till well mixed and smooth


6. grease an 8'; cake tin and dust with flour


7. pour the mixture in the tin


8.crush the almonds coarsely with the rolling pin


. mix jaggery with the crushed almonds or oats.sprinkle this mixture on the top of the cake


9. bake at 180 degree C/350degree F/ gas mark 4 for 35-40 minuts or till done

You can use ground flax seed as a sub for eggs added to your favorite recipe.





For one egg, mix 1 tbsp of ground flax seed with 2-3 tbsp boiling water and let it sit for 10 to 15 minutes before using. It will have the consistency of egg whites.Recipe for eggless cake please??
QUICK CHOCOLATE EGGLESS CAKE





1-1/2 cup flour


1/3 cup cocoa powder


1 tsp baking soda


1/2 tsp salt


1 cup sugar


1/2 cup vegetable oil


1 cup cold water


2 tsp vanilla extract


2 tsp vinegar





Preheat oven to 375掳F.


Spray a small baking pan (8x12) with vegetable spray or Baker's Joy.





Combine dry ingredients directly in the pan. Mix all the wet ingredients





In a small bowl, combine remaining ingredients leaving out the vinegar until the final step.





Combine wet and dry ingredients, stirring together in pan until well combined. Stir in the vinegar rapidly and immediately place pan into preheated oven and bake for 25 to 30 min.





Optional: You can stir in 1/2 cup semi-sweet chocolate chips just before baking to make a richer cake with melted chocolate bits or swirls.
Instead of eggs, use a big spoonful (about the approximate size of an egg) of mayonnaise. I know the mayo is made with egg, but it works great in a pinch if you don't have any eggs in the fridge.
