Anyone Know A Simple Guinnes Cake Recipe!?

Without raisens and nuts etc so its just a choccy guinness cake? I did a quick search but they all had horrible stuff in it like raisens etc lol


Needa know a.s.a.p as im making one for my boyfriends birthday :)

When I was a chef and worked in Jamaica, we made one alot with the traditional Jamaican Rum and Black Fruitcakes, I would use a regular fruitcake recipe, and soak the fruits in a bottle of Guinness overnight, or a simple chocolate cake recipe (Store Mix), with some Guinness soaked raisins and peel, a cup or 2 of chocolate chips or pieces, and instead of the water it calls for use the remaining Guinness.





I have made several types and the fruitcake based is my fav, but the chocolate one is nice, and for the oil the mix asks for, use a bit of melted butter, the Guinness and butter plus the fruits and chocolate will keep the cake moist, do it in a round cake pan like the Scottish Black Bun style cakes, so you can keep it in a tin of or after it has cooled, pop it in the frig, this will make it even more rich and dense.Anyone Know A Simple Guinnes Cake Recipe!?

All eyes will be smiling when you serve this cake! The magic ingredient? A cup of Guinness庐 stout. The beer adds a hint of coffee-like flavor to the cake. If you'd like a non-alcoholic cake, substitute milk for the beer. It's still a great cake!








INGREDIENTS


16 T. butter (1/2 lb.)


1 cup dark brown sugar


1 cup sugar


2 1/2 teaspoons baking powder


1 teaspoon ginger


1 teaspoon cardamom


1 teaspoon cinnamon


1/2 teaspoon salt


2 2/3 cups flour


3/4 cup cocoa


1 cup Guinness庐 stout


6 eggs


8 ounces cream cheese, softened


1/2 cup butter, softened


1 1/2 pounds confectioner's sugar


1 teaspoon vanilla extract





In a bowl, cream together the butter and both sugars. In another bowl, mix together the baking powder, spices, salt, flour and cocoa. At the very last moment, add the Guinness to the eggs. (Don't let it sit too long, or the alcohol will begin to cook the eggs!)





Add half of the dry ingredients to the butter and sugar mixture and blend, then add half of the wet ingredients. Repeat this process until all the ingredients are combined.





Pre-heat the oven to 350掳, and line the bottom of at least two 9-inch diameter cake pans with wax paper. (Use as many layers as you like for your own cake.) Divide the batter between pans, and bake until a toothpick inserted into the cake comes out clean, about 25 minutes. Cool cakes in pans for about 10 minutes, then turn them out onto a wire rack and peel off the wax paper. Let the layers cool completely before frosting.





In a bowl, beat together the cream cheese and butter until mixed, then beat in the sugar. Finally, add the vanilla.





Place one cake layer, bottom side up, on a platter. Spread with frosting, then top with another layer, bottom side down. Repeat with each layer, then spread the remaining frosting smoothly over the top and sides of the cake.

This one is from Nigella Lawson -- I've never made it, but a friend gave me the recipe and swears it's the best cake of all time!





For the cake:


1 cup Guinness


1 stick plus 2 two tablespoons unsalted butter


3/4 cup unsweetened cocoa


2 cups superfine sugar


3/4 cup sour cream


2 eggs


1 tablespoon pure vanilla extract


2 cups all-purpose flour


2-1/2 tsp. baking soda





For the topping:


8 oz. cream cheese, at room temperature


1-1/4 cups confectioners鈥?sugar


1/2 cup heavy cream.





Preheat oven to 350 degrees F and butter and line a 9-inch springform pan. Pour the Guinness into a large wide saucepan, add the butter - in spoons or slices - and heat until the butter is melted, at which time you should whisk in the cocoa and sugar. Beat the sour cream with the eggs and vanilla and then pour into the brown, buttery, beery pan and finally whisk in the flour and baking soda.





Pour the cake batter into the greased and lined pan and bake for 45 minutes to an hour. Leave to cool completely in the pan on a cooling rack, as it is quite a damp cake.





When the cake's cold, sit it on a flat platter or cake stand and get on with the frosting. Lightly whip the cream cheese until smooth, sift over the confectioner's sugar and then beat them both together. Or do this in a processor, putting the unsifted confectioner's sugar in first and blitz to remove lumps before adding the cheese.





Add the cream and beat again until it makes a spreadable consistency. Ice the top of the black cake so that it resembles the frothy top of the famous pint.
