Irish Apple Cake





Ingredients


4 tablespoons butter


1 cup granulated sugar


1 egg, beaten


4 Granny Smith apples, cored, peeled, and diced


1/4 cup chopped walnuts


1 teaspoon vanilla extract


1/2 teaspoon baking powder


1/2 teaspoon baking soda


1/2 teaspoon salt


1/2 teaspoon ground cinnamon


1/2 teaspoon ground nutmeg


1 cup all-purpose flour


Whipped cream or vanilla ice cream for serving


Irish Apple Cake


Serves 10 to 12.


Preheat the oven to 350掳F. Generously grease an 8-inch square cake pan.


In a large bowl, cream the butter and sugar together until light and fluffy.


Add the egg, apples, nuts, and vanilla and stir well. Sift in the dry ingredients and mix well.


Pour the batter into the prepared pan and bake until the cake is lightly browned, about 45 minutes.


Let cool in the pan for 5 minutes, then remove and serve warm or at room temperature with whipped cream or vanilla ice cream.

Apple-Cinnamon Bundt Cake





2 1/2 cups all-purpose flour


1 tbs. ground cinnamon


2 tsps. baking powder


1 tsp. salt


1/2 teaspoon baking soda


1 cup (2 sticks) unsalted butter, melted


1 1/2 cups packed light-brown sugar


4 large eggs


6 Granny smith apples, peeled, cored, and sliced 1/4'; thick.


1 cup confectioner's sugar


1 to 2 tbs. water





Preheat oven to 350 degrees. In a medium bowl whisk together flour, cinnamon, baking powder, salt, and baking soda. In a large bowl, combine butter, brown sugar, and eggs. Whisk until smooth. Gradually whisk in dry ingredients just until combined. Do not overmix. Using a rubber spatula, fold in apples. Spoon batter into a 12-cup nonstick Bundt pan, and smooth top. Bake until a tester inserted in cake comes out clean, about 50-60 minutes. Cool in pan on rack for 15 minutes, and invert onto rack to cool completely. For the glaze, whisk together the confectioner's sugar and enough water to form a thick yet pourable glaze. Set rack with cake over a piece of wax paper (for easy cleanup). Drizzle cake with glaze, and let set before serving. Serves 10.
