I need a good yellow cake recipe?

i have a pot luck to go to tomorrow and i want to make cupcakes. i've tried to recipes for yellow cake so far and am not satisfied with either.





first i tried the recipe picked as best answer here: http://answers.yahoo.com/question/index;鈥?/a>


and it was very very sweet.





so then i tried this recipe:

and it tasted way too similar to cornbread





can somebody please give me an easy yellow cake recipe they've personally tried?I need a good yellow cake recipe?
30 Minute Yellow Cake





Cream:





1 1/4 c sugar


1/3 c shortening


1 t vanilla


1/2 c milk





Add and mix in gradually:





2 eggs


1 c self-rising flour


1/2 c milk


1 c self-rising flour





Pour into two 8 inch greased and floured pans. Bake 20-25 minutes at 350 degrees.I need a good yellow cake recipe?
Ingredients:


2 cups cake flour


2 teaspoons baking powder


1/2 teaspoon salt


1/2 cup butter, softened


1 cup sugar


3 large eggs, room temperature


2 teaspoons vanilla


3/4 cup milk


Preparation:


Preheat oven to 350掳F. Grease and flour 2 9-inch cake pans.


In bowl, combine flour, baking powder, and salt with a wire whisk.





Cream butter and sugar until light and fluffy. Beat in eggs, one at a time. Add vanilla and mix until completely combines. Slowly add flour alternately with milk. At end of addition batter should be smooth. Divide between 2 pans.





Bake for 20 to 25 minutes. Cool 5 minutes in pan, then invert onto a rack and cool completely before frosting.





For a 9 x 13 pan - Baked at 350 degrees F. for 30 to 38 minutes.
7-UP POUND CAKE


3 sticks of butter (margarine will not do)


3 cups sugar


5 eggs


3 cups flour


2 teaspoons lemon extract


3/4 cup 7-Up





Cream butter and sugar for 20 minutes.


Add the eggs, one at a time.


Gradually add the flour and beat well,


then add lemon extract and 7-Up.





Bake 1 1/4 hours at 325 degrees in a well oiled Bundt pan.


Cool 8 to 10 minutes, then dust with powdered sugar.





While most of the pound cake recipes didn't call for a frosting,





Louise Gotti of Port St. Lucie frosts hers with this:





PINEAPPLE BUTTER FROSTING


1/2 cup butter


3 cups confectioners' sugar


1/3 cup crushed pineapple with juice





Cream butter.


Add remaining ingredients and continue creaming


until mixture is well blended and fluffy.
Hor Milk Sponge Cake





Grease and flour a tube or bunt pan OR 2 round cake pans OR 2 loaf pans OR 1 sheet cake pan. in advance. Preheat oven to 350F.





1 cup milk


1 stick butter or margarine





Put in microwave bowl and melt in microwave and set aside or put in pot on stove to do same and set aside - DO NOT SCORCH





In a large mixing bowl, blend:





2 cups flour


1 1/2 cups sugar


2 tablespoons vanilla


2 tablespoons baking powder


3 eggs





Begin adding hot milk mixture little by little , blending well until all of the hot milk is used. Mix thoroughly for 3 minutes. Then empty into greased pan/s. There may be some lumps.


Bake for about 1 hour, check after 50 minutes with knife in center to see if dry. Cool on racks for about 10 minutes before removing from pan/s. Enjoy warm or cooled. Frosted or plain.
