Help! Traditional Chinese Wedding Cake Recipe ASAP!!! :)?

I am appealing..hello! my brother is marrying a wonderful chinese lady who has been a friend of the family for a long time. My Mom and I are cake decorators and are baking the wedding cake for THIS SATURDAY! she wants a traditional chinese wedding cake...she has given us these ingredients translated from her Mother and her recipe:





separate eggs, add sugar to whites, add flour and oil, and water. stir til foamy. The problem is, there are no AMOUNTS (her Mother said, 'add to preference'? ;) and my Mother and i need to know the amounts for each ingredient.





We found this recipe,


1 cup sifted flour


1 teaspoon baking powder


6 eggs, separated


1 cup granulated sugar


1 (20 ounce) can crushed pineapple, very well drained


Whipped Cream Frosting (below)


but it substitutes pineapple for the oil. are we getting close? she mentioned a fruit filled cake! back to internet surfing thank you!!!!!!!!!Help! Traditional Chinese Wedding Cake Recipe ASAP!!! :)?
I grew up in San Francisco and went to many Chinese weddings. Based upon my experience, there is no real ';traditional'; Chinese wedding cake.





However, I've notice the cakes produced by Chinese owned bakeries were lighter than traditional bakeries.





The cake was more like a sponge cakes and the frosting was whipped cream based instead of a heavier buttercream frosting.





The recipe you listed so far sounds like a sponge-like cake and a whipped cream frosting... so that makes total sense.





I would look for sponge cake recipes... make a two layer cake with a pinapple/whipped cream middle layer. The outside coating would be whipped cream where you can use your decorating skills to add pretty decorations.





From what I gather, red is a symbolic color of good luck... so add some red flowers or something.

I agree with the guy before me said there's no actual traditional cake.


Not too sure what the exact ingredients are but I could tell you the characteristics of what the cake entails. Keep the actual cake very fluffy and airy almost like sponge cake. In terms of the frosting, your going for a flavor close to condensed milk but very light. No chocolate only vanilla. If you do lettering they almost always use red see through frosting. There usually one layer inside the cake that has a mix of fruit chunks blended with frosting. Just keep in mind asian people usually don't eat too much sugar so don't make anything too heavy. Congrats to your new sister!
