What does oil in a cake recipe do for it?

I would guess that it just adds the moistness, but I'm not positive so I thought I would ask. If that's the case, are there any *vegan* fat-free substitutes for the oil? What does oil in a cake recipe do for it?
Use veggiey oil .The oil helps your cake to be moist and airy. Why would you want to remove it ?Would think you would be more worried about the eggs being an animal product.Yes there is vegan cook books but i do not have one if you remove all the oil from your cake it will make it rubberyI do have some recipies in my chatelaine cook book for pasta, zucchini andd mushroom lasagna, but no cakes in here.sorry but there are vegan cook books What about cheese cake easy no eggs or little fat?

Oil is the shortening that's needed (Crisco %26amp; butter are other shortenings). Moisture is provided by milk, water or other liquid. I'm not vegan, but didn't think oils like canola, peanut, walnut, vegetable, olive had animal products in them. That's weird:) If you're worried about ';fat-free';, then be more concerned with the sugar and flour; cake isn't usually considered a ';diet'; dessert. Also, you'll need a substitute for the eggs.......
oil helps the cake to be moisten. if you are scared of fatty like mine, then i would suggest to use shortening instead coz it's made from vegetable oil. if you aren't sure, then use vegetable oil instead. there are quite a number of cakes that do not require oil, for instance, steam cake. it's delicious yet not fatty.
the oil actually moistens the cake but it also helps to put the cake in your fridge after it cools down it really moistens it and gives a real great taste
Apple sauce
angel food cake has little fat. well u cant eat egg whites so I Guess u need a subsitute for that.
