Here's another delicious family favorite:
COCONUT POUND CAKE WITH LIME GLAZE
3 sticks butter softened
1 (8 oz.) pkg. cream cheese, softened
3 cups superfine sugar
6 large eggs, room temperature
1 tsp. vanilla extract
2 tsp. coconut extract
1/8 tsp. almond extract
3 cups flour sifted
1/2 tsp. salt
2 cups shredded coconut
Glaze:
1/2 cup superfine sugar
1/4 PURE lime juice (bottled doesn't work well; be sure to use actual limes)
1 tsp. lime zest (green part only, not the white pith underneath)
1 tsp. coconut extract
Preheat oven to 300 degrees F. Line the bottom of a 10 '; tube pan (not fluted) with wax paper and spray well with non-stick cooking spray.
In a large bowl, cream butter and cream cheese until smooth. Add sugar, 1 cup at a time, and beat until light and fluffy. Add eggs one at a time, and mix only until incorporated. Add extracts. Combine flour and salt and add to batter 1 cup at a time until well blended. Stir in coconut.
Pour into tube pan and bake 1 hour and 20 minutes, or until cake tester inserted into cake comes out clean. (Ovens will vary. If cake is not done at first, put back in oven for 5 minute intervals until done.)
When the cake is done, run a butter knife or slender spatula around edges of cake to prevent sticking, and allow the cake to cool 10 minutes in pan.
While cake is cooling, prepare Lime Glaze. In a small saucepan combine sugar, lime juice and lime zest. Bring to a boil and cook 1 minute or until sugar is dissolved, stirring frequently. Remove from heat and stir in coconut extract.
Invert cake onto serving platter. Brush the desired amount of Lime Glaze over cake.

The most awesome cake recipe that I have EVER baked was on called tres leches cake. It is spanish for three milk cake. You use sweetened condensed milk, coconut milk and evaporated milk. You must try it. Google the food network, then go to ultimate recipe showdown, and type in tres leches cake. I PROMISE you will not be disappointed!
