Recipe from ';everyday cheapskate'; column for box cake made with melted ice cream?

MELTED ICE CREAM CAKE





Makes 10 to 12 servings.





1 package (18.25 ounces) plain white-cake mix





2 cups melted ice cream, your choice of flavor





3 large eggs





To prepare oven, pan: Preheat oven to 350 degrees. Move rack to middle of oven. Lightly mist 12-cup bundt pan or tube cake pan with vegetable-oil spray. Dust with flour. Shake out excess flour. Set aside.





To make cake: Place cake mix, melted ice cream and eggs in large mixing bowl. Using electric mixer, blend on low speed for 1 minute. Increase mixer speed to medium. Beat for 2 minutes, scraping sides as necessary until batter is thick and well blended.





To bake cake: Pour batter into prepared pan, smoothing top with rubber spatula. Bake for 38 to 42 minutes or until cake springs back when pressed lightly with finger and just starts to pull away from sides of pan. Remove pan from oven. Place on wire rack to cool for 20 minutes. Run knife around edge of cake. Invert cake onto plate or rack, so cake is right side up. Let rest for 30 minutes or until completely cool.
