A simple lemon cake recipe?

I have little experience cooking so a simple one would be good. I was also curious if you need to put gelatin to make a good lemon cake. The cake is just going to be circular, i only really want one layer but i could try to make a two layer one. I wouldn't mind a spongy-like lemon cake but i definitely would want the lemon flavor to be obvious but not overpowering or sour. lol, i'm asking a lot but i really want this cake to turn out well (in the past i've had problems with not cooking something all the way through). Plus, its for a friend's birthday :)A simple lemon cake recipe?
This one is easy and delicious





1/2 cup butter, melted


1 cup sugar


2 eggs, well beaten


1 tablespoon lemon juice


1/4 teaspoon salt


1 1/2 cups flour


1 teaspoon baking powder


1/2 cup milk


1/3 cup lemon juice


1/4 cup sugar





Mix together 1 cup sugar and butter.


Add eggs and 1 tablespoon of lemon juice; mix well.


Add salt, flour, and baking powder to mixture.


Add milk.


Bake at 325掳F in a well greased loaf pan for 1 hour,or until golden brown.


Mix 1/3 cup lemon juice and 1/4 cup sugar.


Use a toothpick to make holes in top of cake and drizzle lemon juice and sugar mixture over the top of the cake when removed from the oven.

Easy Lemon Cake





170g (6oz) Self Raising Flour


170g (6oz) Margarine


225g (8oz) Caster or soft brown Sugar


2 Large Eggs, beaten


1 Lemon





Pre-heat oven to 190掳C; 375掳F: Gas 5


Grease an 8 inch by 10 inch baking tin.


Cream the margarine and 170g (6oz) of sugar in a bowl until soft and fluffy.


Gradually add the beaten eggs into the creamed mixture.


Fold in the flour and the grated lemon rind.


Spread the mixture evenly in the tin.


Bake for 30 to 40 minutes until springy when touched.


While the cake is cooking place the lemon juice and remaining caster sugar into a small saucepan and heat until warm but not boiling.


When the cake has cooked prick the top with a fork and spoon the syrup over the cake.


Allow the cake to cool in the tin.

EASY LEMON CAKE





1 pkg. lemon flavored gelatin


1 c. hot water


1 pkg. yellow cake mix


3/4 c. cooking oil


4 eggs


1 tsp. lemon juice or extract





Mix together gelatin and water; let cool. Mix cake mix and oil; beat the eggs, one at a time, until smooth. Add lemon juice and gelatin. Pour in 9 x 13 inch pan. Bake 35 minutes in moderate oven and punch holes in top of cake. Glaze immediately with glaze.





GLAZE:





2 c. powdered sugar

An easy lemon cake to make up for any occasion.





Prep Time: 10 minutes





Cook Time: 50 minutes





Ingredients:


4 eggs


1 package (2-layer size) yellow or butter cake mix


1 package (4 serving size) instant lemon pudding mix


3/4 cup water


1/3 cup vegetable oil


1/3 cup lemon juice


2 cups sifted powdered sugar


Preparation:


In mixing bowl, beat eggs until thick and lemon-colored. Add cake mix, dry pudding mix, water, and vegetable oil. Beat at medium speed of electric mixer for 10 minutes. Pour batter into an ungreased 10-inch tube pan with removable bottom. Bake cake at 350掳 for about 50 minutes, or until a wooden pick or cake tester inserted in center comes out clean. Grasping tube center, remove hot cake (still on pan bottom) from the pan. Combine lemon juice and sifted powdered sugar in a saucepan and bring to a boil, stirring constantly. Using a fork, prick many holes evenly in top of cake. Drizzle hot glaze over top and spread over sides of cake.
