2 cups raisins, choped
1 and 1/2 cups sultanas
1 cup currents
2/3 cup chopped glace cherries
1/2 cup chopped mixed peel
(or you can use the same quantity and use mixed fruit mix instead)
2 1/2 cups plain flour
2 teaspoons baking powder
2 teaspoons mixed spice
1/2 teaspoon nutmeg
1/2 teaspoon bicarbonate of soda
250g butter
1 cup of brown sugar
2 table spoons marmalade or plum jam
4 eggs
1/2 cup chopped blanched almonds
1/2 cup water
Place water in fruit and leave for at least a day; or over night;
Blend dry ingredients and sift twice.
Cream butter and sugar until light, beat in marmalade or jam. Add eggs one at a time, beating well between each egg, Fold in dry ingredients alternately with the soaked fruit. Blend in almonds. Spoon mixture evenly into a 20cm round or square deep cake tin, previously lined with two layers of brown paper and one of greaseproof paper.
Bake in a slow oven for 3 1/2 to 4 hours. Cool slowly in tin by wripping in a thick cloth.
Oven tem 150-160*
Store for several weeks for best flavour.
Ice if desired with orchard icing.

Red Velvet Cake
I prefer this red velvet cake recipe above all I've tried because I always have self-rising flour on hand. Oil makes the layers moist, and butter and cream cheese with powdered sugar and chopped pecans are the makings of a mighty fine
frosting.
2陆 cups self-rising flour
1 cup buttermilk
1陆 cups vegetable oil
1 teaspoon baking soda
1 teaspoon vanilla
录 cup red food color
1陆 cups sugar
1 teaspoon cocoa
1 teaspoon vinegar
2 large eggs
Preheat oven to 350掳. Combine all ingredients in a large mixing bowl and beat with mixer until well blended. Pour batter equally into three well- greased or sprayed cake pans. Bake 20 minutes. Cool in pans 10 minutes. Remove from pans and cool completely.
Frosting
1/3 pound butter softened
1 8-ounce and 1 3-ounce package cream cheese softened
1 pound box powdered sugar
2 cups chopped pecans
1 teaspoon vanilla
Combine butter, cream cheese, powdered sugar and vanilla in a bowl. Beat until fluffy. Add chopped pecans. Frost between layers, top and side of cake.
Great looking cake, that tastes even better, for Christmas or Valentine's Day.
it's usually simple enough just to omit the alcohol from any standard recipe, and the cake still tastes fine.
also if you cook the alcohol, then you remove it - although the taste of the original drink (for instance sherry for this).
alternatively it is often nice to 'flambee' it, i.e pour the alcohol onto it and set fire to it (as you would with a christmas pudding). again the flavour remains, but the alcohol is completely removed.

Black Forest Cake
This lucious chocolate dessert has been simplified with the use of convenience products--cake mix, canned frosting and canned pie filling. You may garnish the top with chocolate, if you would like.
Ingredients
1 chocolate cake mix
1 can chocolate frosting
1 can cherry pie filling
1 oz. bittersweet baking chocolate (optional)

Method
Prepare cake according to package directions, using 2 8- or 9-inch round layers. Cool 10 minutes, remove from pans; cool completely. Place one layer upside down on a plate. Add a band of frosting about 1/2-inch wide and tall around the edge of the layer (to form a wall to hold the filling.) Spoon the pie filling inside the ring of frosting. Top with the second cake layer (right side up). Frost top and sides. If you like, use a swivel-bladed vegetable peeler to shave chocolate onto the top of the cake.

2/3 cup whole wheat pastry flour
1/4 cup unbleached all-purpose flour
1 cup raw cane sugar (Turbinado)
2/3 cup unsweetened cocoa powder
1 1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup vegetable oil
2 eggs
1 teaspoon vanilla
1 cup brewed coffee, cooled
Directions:
Preheat oven to 350掳. Spray a 9-inch cake pan with cooking spray. Line bottom of pan with waxed paper; spray paper. Dust bottom and side of pan with cocoa powder, tapping out excess; set aside.
In a medium bowl, combine flours, sugar, cocoa, baking powder, baking soda and salt; set aside. In another bowl, combine oil, eggs, vanilla and coffee. Mix wet ingredients into dry ingredients and pour into prepared pan.
Bake 30 to 35 minutes or until a toothpick inserted in middle of cake comes out clean. Cool cake in pan on a wire rack 10 minutes.
Run a knife around edge of cake and invert onto a wire rack; peel off waxed paper. Invert again onto rack to cool completely.
Log Cake
Preparation: 9cm x 4cm log cake x 6pcs
Ingredients:
Cake:
210g egg white
210g castor sugar
5g cocoa powder
35g soft flour
140g melted chocolate
Hazelnut Cream:
80g whipped cream
40g hazelnut paste
Decoration:
Some sugar dolls
Some chocolate
Some hazelnut cream
Method:
1. Whisk egg white until foamy. Add sugar in three times, and whisk until firm peak.
2. Sieve cocoa powder and soft flour together, and fold into (1) by hand gently. Add in melted chocolate, and mix well. Put into piping bag with plain nozzle, and pipe onto baking tray lined with greaseproof paper.
3. Bake in oven at 200C for 8-10 minutes. Remove and sprinkle some sugar. Cool and turn over, then tear off greaseproof paper.
4. Spread whipping cream and hazelnut paste onto cake, and roll it up like Swiss roll. Wrap in greaseproof paper, and chill in refrigerator for 10-15 minutes.
5. Get it out of refrigerator, cut into pieces and add decoration when serve.
Christmas cake without alcohol, you should be reported to the Pope.....seriously check with your pastry baker there is an alcohol replacement, tastes similar but it's not the real thing......you can also fire the alcohol, before adding it to the mix. My late mom used to soak the dried fruits and plump them up in brandy, man, it was so moist..............

If you omit the alcohol. Replace it with a half cup of orange juice.It tastes much nicer if you use fresh squeezed oranges.
