It's morello cherries. I love those. They are the best. Though you use either fresh cherries (only those for decoration, and you can use them in the filling, too) or preserved cherries (never for decoration, only for the filling). One doesn't soak them in Kirsch, as someone else posted. Yep, AUTHENTIC Black Forest cake includes Morello cherries ( Morello cherries are native to Black Forest) soaked in Kirsch (Morello cherry brandy), rich chocolate cake brushed with more Kirsch, and the outer frosting is whipped cream- which is usually decorated with chocolate shavings.
Morello cherries aren't easy to find outside of Germany, so many variations will call for maraschino, Bing, sour, or sweet dark cherries. Also, some recipe variations will not use Kirsch- for those not wanting alcohol (children and medical reasons).
The german name is ';Schwazw盲lder Kirschtorte'; literally translated: Black Forest Cherry Tart.
