Hello,try this:
Candied Pineapple and Cherries
2-(1 Lb.,14 oz )cans sliced pineapple,drained
2 cups sugar
1/2 cup light Karo syrup
1 2/3 cups pineapple syrup (from cans of sliced pineapple)
3-8 oz. jar Maraschino cherries,drained
Drain sliced pineapple-reserve syrup. Combine sugar,Karo and pineapple syrup in a heavy 10'; skillet (I use cast iron). Cook over medium heat,stirring constantly,until mixtures boils. Cook until temperature reaches 234 F degrees (soft ball stage). Add a third of the pineapple slices. Bring to a boil. Reduce heat. Simmer 25 minutes or until pineapple is transparent around the edges. Remove. Drain on wire rack. Repeating with remaining pineapple slices. Then add cherries. Simmer for 25 minutes. Let dry 24 hours at room temperature on wire rack.
